• Charcoal BBQ- this is the best way to get that smoky flavour that you just cannot get with a gas grill.

• Good Fuel- lump wood charcoal is some of the best and gives incredible flavour.

• Cook on Coals- do not put the food on whilst there is still a flame, you want the coals white hot for an even temperature.

• Marinade- marinating meat for a few hours prior or overnight helps the flavour really soak in and putting additional marinade on during cooking keeps the meat moist.
